Recipe: Piké Sticky Rice (with Red or Black Beans + Piké Marinade)

Ingredients

  • 2 cups rice
  • 1 cup dried red or black beans
  • 1 onion, cut in half (for cooking beans)
  • 3 to 4 whole garlic cloves (for cooking beans)
  • 3 chopped green onions
  • 2 to 3 tbsp Piké marinade
  • 2 chopped garlic cloves (for the base)
  • 3 tbsp oil
  • 1 sprig of thyme
  • 1 bay leaf (optional)
  • Salt
  • Water

Preparation Steps

1. Cook the Beans

Rinse the beans.
Place in a pot and add enough water to cover.
Add the halved onion and whole garlic cloves.
Cook for 1 hour 15 minutes to 1 hour 30 minutes.
Keep all the cooking water.

2. Wash the Rice

Place rice in a bowl, rinse with water and drain.
Repeat 2 to 3 times, then drain completely.

3. Prepare the Aromatic Base

Heat the oil.
Add chopped garlic and green onions.
Add Piké marinade.
Add thyme, bay leaf and cooked beans.

4. Add the Rice

Add washed rice and mix well.

5. Add the Liquid

Add bean cooking water, covering the rice by about the height of a finger.
Add salt.
Use approximately 3 cups of liquid for 2 cups of rice.

6. Cook (15 minutes)

Let boil until water reaches rice level.
Reduce heat to low.

7. Finish

Turn off heat.
Let rest for 5 to 10 minutes.
Optional: cover with parchment paper under the lid to help steam the rice.
