Griot Recipe with Piké Marinad

Ingredients
- 2 kg pork (shoulder or butt), cut into cubes
- A few lemons (to clean the meat)
- A few spoons of Piké Marinade
- 1 cup of water (for cooking)
- Oil for frying
Preparation Steps
1. Clean the meat
Squeeze the lemon juice over the meat and rub well.
Rinse.
Pour very hot water over the meat to purify it thoroughly.
Drain completely.
2. Marinate the pork
Add a few spoons of Piké Marinade.
Mix well to coat each piece.
Let marinate for at least 1 hour in the refrigerator.
Even better if marinated for several hours.
3. Cook the pork
Place the marinated meat in a pot with all the marinade.
Add only 1 cup of water.
Cover and cook for 1 to 1½ hours, until the pork is tender.
Keep a little of the cooking liquid if you want to prepare a ti-malice sauce if needed.
4. Fry the griot
Drain the cooked pieces.
Heat the oil.
Fry until the pieces are golden and crispy.
5. Serve
Serve with bannann peze, rice, salad…
